22 pound thawed turkey
The juice of an Orange, Lemon and Lime was squeezed into the cavities
cut up carrots and celery were placed in the cavities to add flavor
they were removed and discarded when the turkey was removed from the oven
3 pints of water were placed in the pan with the turkey
the turkey was rubbed with butter and sea salt and pepper was spread over it

Cover turkey with foil
I used a remote reading thermometer to monitor the temperature
If it were not to on schedule I could have adjusted the temperature as needed

it was very moist and there was a lot of liquid to make gravy with



*for 2003 the bird was 24 pounds
the juice of 2 Oranges, 2 lemons, 2 limes - about 1 cup total
in place of 3 pints of water I used one 14 oz can of chicken broth and 14 oz of water
I uncovered the turkey at about 165 degrees
it browned for about 45 minutes - basting a number of times
removed at 175 degrees and let rest for about 20+ minutes before carving.
