Irish Raisin Bread Recipe
This is the original hand written version given to GG Henning.
ORIGINAL Gramma Welsh Raisin Bread !
The story was that Gramma Welsh got the recipe from her Irish neighbor and was able to produce a better loaf so that it became her recipe!!!

3 cups flower
2 cups sugar
2 teasp baking soda
2 teasp cinnamon
1 teasp nutmeg
1 stick butter
2 cups raisins
2 cups buttermilk (mom liked keep it for a while before using)
sift flower, sugar, baking soda, cinnamon & nutmeg together
rub butter into mixture
add raisins & buttermilk
pour into loaf pan (mom liked to use a round angel food pan)
bake at 350 for about 45 minutes

Salsa
Sweet - Hot

3 28oz cans diced tomatoes in juice
2 cups generic sweet relish
juice of 1 lime
1 tbs. granulated sugar
5 tbs. Mrs. Renfro's 'Hot' Habanero Salsa
I have used many different generic(house brand) salsas
containing tomatoes, jalapeno, green chile, habanero peppers
along with onion, garlic, cilantro, vinegar
stir and let set a while, stir again before placing in containers
makes 6 pints

IRISH CREAM
1 can (14 oz) sweetened condensed milk
1 1/2 cup heavy cream
3 eggs
1 cup - good - Irish Whiskey
1/4 teaspoon coconut extract
1 1/2 tablespoons chocolate syrup
add ingredients to blender
mix on high speed 30 seconds
store in tightly covered container in refrigerator
keeps for several weeks
